Working through the Power Query Unpivot - fix 4 Common Data Layouts.
When I am ready to select Close and Load to, I do not see the same options shown in your video. I am using MS Excel 2013 and have upgraded my Power Query in MS.

Welcome to our forum!
Unfortunately, Excel 2013 does not have the newer options to load to PivotTable and Pivot Chart. There's no way to get them other than to purchase the latest version of Excel (2021) or get a Microsoft 365 subscription. If you were to upgrade, I would strongly recommend you do not get Excel 2021, as it's already out of date.
