I have a Data Model that uses 2 folders of data for month to month active employees and terminated employees. As well as a few small relationship tables.
My file is large and it just recently tripled in size for some reason after I added a column to a handful of pivot tables.
But my main question is, do these Transform Files take up a lot of space and are they required to keep?

The queries that are connection only don't make much difference to your file size at all since the data isn't getting loaded anywhere. I trust the queries that are loaded are only loaded to the data model and aren't also loaded to tables in your Excel file. This would duplicate the data unnecessarily.
If your PivotTables are large, then adding a column of data to them could increase your file size, but I wouldn't have thought it would be by 3 times. Hard to say much more without seeing the files.
