I am attempting to connect one powerpivot query to another in the diagram view, but it keeps changing the direction from the one to many that I request to the many to one. Why? How do I fix this? What causes it. I have already checked the data fields I am trying to connect and they are set up the same, both as text. Could it be due to the fact that the many table is also connected to another query?

I don't think you need to fix anything. It can only do 'one' to the side which has unique values in the column. If there are duplicates then it can only be a 'many' connection. Power Pivot is setting it up in the only direction it can be achieved.
Have you tried creating PivotTables from these tables? Do you get the desired results?
