Is it possible to add a column to a pivot table where users could enter data? Thanks!

No, sorry. PivotTables only display data from the data source they are linked to. The best you could do is add a column beside the PivotTable but you would run the risk of those cells becoming misaligned to the PivotTable data if a refresh resulted in a rearrangement of the PivotTable.
