I have a pivot table with Date as a label field. That field sources data from cells formatted as Dates.
When I sort the table Oldest to Newest this is the result:

I have already combed through web posts and youtube videos and cannot find a solution to what should be pretty basic functionality.
What is missing here?
Looks like alphabetical sort, so format is not date, even if it looks like a date.
Can you upload a sample file that replicates the problem?
Hi, can't send file but the source cells are formatted date and so are the fields in the pivot table. I already posted screenshots of this but for some reason this blog has lost that reply, but believe me it is true. Excel for Mac latest version.

Cell formats are not the same as the data type being a date. You can format a cell containing text as a currency, but it will still display text. Likewise for dates. See this post on how to tell if your dates are actually formatted as text and how to fix them.
