Using the in-built waterfall chart in Office 365 you can set the columns that you want to be totals - see picture
How do I do this using the old method of creating a waterfall chart (need more flexibility) and is it possible to next the axis like in a regular bar chart?

There is no picture attached. Also, I'm not sure what you mean by "is it possible to next the axis".
That said, you probably need to add a category for the 'total' series required. Hard to say without seeing the underlying structure of your chart and it's source data, which I doubt the picture would have shown anyway.

Thanks - that was enough info to get it working
It was supposed to say nest - this i've done now but is it possible to have both axis labels horizontal rather than one rotated
The labels will only display horizontally if you make the chart wide enough for them to fit. You can't force them any other way.
