I've seen the example for the above in https://www.myonlinetraininghub.com/slicer-controlled-interactive-excel-charts
but I was wondering how that could/should be tweaked to show more than one series on the same chart. To use the
example, how to show North and South regions simultaneously.

The attached file contains a workaround as I believe you can't just tweak the technique used in the original file.
I've kept the data from Mynda's example and stripped everything else that could suggest this is an official workbook from MOTH made by Mynda. It merely demonstrates a solution for what I believe you need.
Use Power Query to unpivot the chart data and create a pivot chart on that unpivoted sales data with a slicer on the region. The pivot table is hidden below the chart.
