I will looking at building a safety dashboard and would like to map injuries to a body location, how would I go about doing this? Any ideas would be much appreciated.

I would suggest you create an info graphic.
Just Google images for injury body parts and you will see many good examples.

You can refer attached for some basic ideas.
Just choose the appropriate graphic. Mine is just a demo.
Some additional ideas is to link to a Pivot Table (if you have raw data) where you can filter using slicers for different region, location etc.
Just choose one that would present your data effectively.
